Buttermilk solids are the powdered form of buttermilk, made by evaporating all the liquid from buttermilk.  Typically found in paste or powder form, Enzyme Modified Cheese is the result of adding enzymes to the cheese-making process resulting in a product with upwards of 15-30 times the cheese flavor intensity of standard cheese. It is used to impart cheese flavors to food products.
