Granular cheese is a type of cheese produced by repeatedly stirring and draining a mixture of curd and whey.  Blue cheese is made by the addition of the fungus Penicillium to the cheese-making process. This gives Blue cheese its distinct blue-spotted color, odor, and salty, sharp flavor.
