Cabbage is a cultivated plant eaten as a vegetable, having thick green or purple leaves surrounding a spherical heart or head of young leaves. Cabbage juice concentrate is the result of clarification, filtration and evaporation of juice from cabbage. It is essentially taking the flavor of the vegetable away from the water. The concentrate is sold either frozen or as a powder.
