Enriched bleached wheat flour is a powder made from grinding wheat. The flour has a whitening agent added to it, to obtain a white appearance. Bleaching allows the surface of the grain to help with the development of gluten. Enriching is adding back nutrients which naturally occur in wheat that have been lost during processing. Unbleached wheat flour has not had any whitening agents added to it.
