Benzoic Acid (To Maintain Freshness)
Benzoic acid is the simplest aromatic carboxylic acid, and takes the form of a colorless, crystalline solid. It is used in food as a preservative by inhibiting mold, bacteria and fungus growth reducing the pH . It is poisonous in strong amounts, but considered safe for ingestion in concentrations below 0.1%.
