Potato Flour

Potato flour is commonly used as a thickener, ingredient in baking, a binder, shelf life extender, and breading. It is made from whole potatoes, often including even the use of the peel, both in raw or cooked forms. First the potato is dried, then it is ground into flour. Potato flour is best used when added in small amounts to gluten-free flour blends as too high of a concentration will leave a product dense, gummy, and with a distinct potato flavor.
