THAI JASMINE RICE DOES NOT NEED RINSING OR SOAKING. COMBINE IN 3-QUART SAUCEPAN, 2 CUPS WATER, 1 CUP UNCOOKED RICE AND IF DESIRED, 1 TEASPOON SALT. BRING TO BOIL. TURN HEAT DOWN LOW AND COVER WITH A LID. SIMMER 10-12 MINUTES, OR UNTIL ALL WATER IS ABSORBED AND THE RICE IS TENDER. REMOVE FROM HEAT AND ALLOW THE RICE TO SIT (COVERED) FOR 5-10 MINUTES. FLUFF WITH FORK AND SERVE.
