Baking Powder generally consists of Sodium Bicarbonate, an acidifying agent such as Tartaric Acid, and a drying agent to prevent caking such as Corn Starch. Baking powder is a leavening agent that causes flour mixtures to rise. Leavening changes the baked product's volume, crumb, texture, and ultimately, its flavor.
