Cheddar cheese is a type of cheese that has gone through a process called 'cheddaring' during its manufacture. The process aims to reduce the whey content, increase acidity, and gives distinct flavors and textures. Cheddar is commonly aged and colored yellow from Annatto seed.  Granular cheese is a type of cheese produced by repeatedly stirring and draining a mixture of curd and whey.  A semi-soft cheese is a cheese that has a water content that is generally between 36% and 45%. They undergo an average aging process, usually retain fresh milk flavors, and typically have a range of firm, but pliable textures. Blue cheese is a general name for types of cheese that have been injected with cultures of the mold Penicillium; this results in spots or veins of blue-tones and a distinct smell.
