Lecithin (322) is a common compound found in cells of all living organisms required for healthy biological function.It functions as an edible and digestible surfactant and emulsifier. In the food, pharamceucial, and cosmetic industries lecithin is used as an emulsifying and stabilizing agent. Common forms of lecithin include Soy Lecithin and Sunflower Lecithin, but can be derived from many other plants or animals.
