Gum Acacia comes from the secretions of several varieties of the Acacia tree. It was one of the first gums used in confectionery sweets and has many uses in food production including thickening (which helps with suspension, stabilization, and whipping), emulsifying, bulking, and film-forming. Produced by grinding the guar bean, guar gum is used to thicken, emulsify, stabilize, and add texture to food products.
