Caramelized Onion Juice Concentrate is the liquid extracted from onions after they have been caramelized (cooked to the point that their color turns gold-brown and they become sweet). The juice then has some or most of its water removed to result in a product that has a much more potent flavor. It can be used to flavor soups, stocks, and dishes.
