Malted Barley

Malted Barley is a sugary solution obtained by the controlled sprouting of barley grains that produces enzymes which turn starch into sugar. Malt (from Barley) is mainly used in the brewing industry to produce beverages such as beer and whiskey, and in doughs to increase fermentation rates. Some gluten may remain after the malting process, presenting a problem for those with coeliac disease.
