Sodium stearoyl lactylate, SSL, is a cream-colored powder or brittle solid. SSL is a mixture of sodium salts of stearoyl lactylic acids and minor proportions of other sodium salts of related acids. It is a food additive that serves as an emulsifier, a flour treatment agent, a foaming agent, and/or a stabilizer.
