FILLING MAKES ABOUT 15 SMALL TACOS
1. HEAT 12-INCH NON-STICK SKILLET over MEDIUM-HIGH heat until hot, 2 to 3 minutes.
2. ADD PORK AND VEGETABLES to skillet. Cook 7 to 10 minutes, until liquid is concentrated, stirring occasionally.
3. TRANSFER TO A SERVING BOWL. Pull meat into large shreds. Serve pork in warmed tortillas topped with tomatillo salsa.
