SET ASIDE AND SPRINKLE WITH PEPPER. IN THE SAME WARM PAN, WITH HEAT SLIGHTLY REDUCED, PLACE A BUTTERED SLICE OF BREAD, BUTTER SIDE DOWN. TOP WITH TWO OR THREE SLICES, OR ABOUT AN OUNCE AND A HALF OF SHREDDED GRUYERE. TOP THE CHEESE WITH ARUGULA. TOP WITH THE COOKED EGGS. ADD MORE CHEESE IF DESIRED. TOP WITH REMAINING SLICE OF BREAD, BUTTERED SIDE UP. WHEN BOTTOM SLICE IS BROWNED AS YOU LIKE, GENTLY PRESS DOWN ON SANDWICH EVENLY WITH SPATULA. GENTLY FLIP SANDWICH, CAREFUL NOT TO ALLOW FILLINGS TO SPILL OUT. COOK UNTIL SECOND SLICE REACHES THE DESIRED DEGREE OF BROWN AND CHEESE IS MELTED.
