Coconutmilk
Coconut Milk is derived from the edible, white and fleshy ?meat? of the coconut. To obtain the milk the coconut is peeled and the flesh cut into pieces before being crushed. The extract obtained is boiled, homogenized, filtered, canned and sterilized. When the boiling process is continued for longer a more concentrated coconut cream is produced. Coconut milk should not be confused with the watery liquid inside the coconut. Coconut milk is widely used in cooking most commonly in Asian curries. Coconut milk is called ?santan? in Malay. Coconut milk is high in saturated fat and minerals.
