you will need: 2 Large Eggs, 2/3 Cup Water, 1/3 Cup Oil
DO NOT EAT RAW BATTER.
Makes 6 jumbo, 12 Medium, or 36 Mini Muffins
1. prep - PREHEAT oven to 400°F.
GREASE muffin pans or line with paper baking cups.
RINSE and DRAIN blueberries thoroughly with cold water. Set aside.
2. mix - EMPTY muffin mix into large bowl.
STIR eggs, water and oil into muffin mix until moistened (about 50 strokes). Batter will be slightly lumpy.
FOLD rinsed and drained blueberries gently into batter. Spoon batter into prepared muffin pans. Fill cups 2/3 full. SPRINKLE streusel topping evenly over each muffin and tap lightly into surface.
3. bake - BAKE in center of oven at 400°F following baking times provided.
6 Jumbo Muffins: 23 to 26 minutes
12 Medium Muffins: 16 to 19 minutes
36 Mini Muffins: 10 to 13 minutes
COOL 5-10 minutes. Gently loosen muffins before removing from pan.
stir 2 tablespoons flour into the mix. Mix as directed above.
Prepare and bake muffins following directions above, except using 1/2 cup egg substitute, 1/3 cup oil and 2/3 cup water.
Blueberry Streusel Quick Bread
you will need:
1 pkg Duncan Hines® Simple Mornings™ Blueberry Streusel Muffin Mix
3 Eggs
3/4 cup Water
1/3 cup Oil.
Baking Instructions:
1. Preheat oven to 375°F.
2. Grease 8x4 inch loaf pan with non-stick spray.
3. Rinse and drain blueberries thoroughly with cold water. Set aside.
4. Empty muffin mix into large bowl.
5. Break up any lumps.
6. Stir eggs, water and oil into muffin mix until moistened (about 50 strokes). Batter will be slightly lumpy.
7. Fold rinsed and drained blueberries gently into batter.
8. Pour batter into loaf pan.
9. Sprinkle streusel topping over batter before baking.
10. Bake in center of oven at 375°F for 35-40 minutes or until a toothpick inserted in center comes out clean.
11. Cool 10-15 minutes. Loosen edges with knife and gently remove loaf from the pan.
Lemon Blueberry Streusel Quick Bread
Follow directions above. Simply add 1 tablespoon lemon juice to eggs, water and oil and stir into muffin mix.
