3 CHEESE ZUCCHINI TOAST - INGREDIENTS: 4 SLICES OF RUSTIK SOURDOUGH BREAD, 1 1/2 C SLICED ZUCCHINI, 1/4 C SHARP WHITE CHEDDAR CHEESE CHUNKS, 1/2 C SOFT BRIE CHEESE, 3 TBSP GRATED PARMESAN CHEESE, 2 TBSP OLIVE OIL, GROUND BLACK PEPPER, SALT. DIRECTIONS: SEASON ZUCCHINI WITH SALT AND PEPPER. SAUTE ZUCCHINI OVER MEDIUM HIGH HEAT WITH OLIVE OIL, TOAST THE BREAD, TOP BREAD WITH ZUCCHINI AND CHEESES, BAKE FOR 5 MINUTES AT 400°F UNTIL CHEESES MELT
