You will need: 2 Large Eggs, 3/4 Cup Water, 1/3 Cup Oil.
Makes 6 Jumbo, 12 Medium, or 36 Mini Muffins.
1. Prep - PREHEAT oven to 400°F.
GREASE muffin pans or line with paper baking cups.
2. Mix - EMPTY muffin mix into large bowl.
STIR eggs, water and oil into muffin mix until moistened (about 50 strokes). Batter will be slightly lumpy.
SPOON batter into prepared muffin pans. Fill cups 2/3 full.
SPRINKLE granola topping evenly over each muffin and tap lightly into surface.
3. Bake - BAKE in center of oven at 400° F following baking times provided.
COOL 5-10 minutes. Gently loosen muffins before removing from pan.
6 Jumbo Muffins: 23 to 26 minutes
12 Medium Muffins: 16 to 19 minutes
36 Mini Muffins: 10 to 13 minutes.
Stir 2 tablespoons flour into the mix. Mix as directed above.
Prepare and bake muffins following directions above, except using 1/2 cup egg substitute, 1/3 cup oil and 3/4 cup water.

1 pkg Duncan Hines® Simple Mornings™ Apple Cinnamon Muffin Mix
3 Eggs
3/4 cup Water
1/3 cup Oil
1/2 cup of raisins (optional).
Baking instructions:
1. Preheat oven to 375° F.
2. Grease 8x4 inch loaf pan with non-stick spray.
3. Empty muffin mix into large bowl.
4. Break up any lumps.
5. Stir eggs, water, oil and raisins (optional) into muffin mix until moistened (about 50 strokes). Batter will be slightly lumpy.
6. Pour batter into loaf pan.
7. Sprinkle granola topping evenly over batter before baking.
8. Bake in center of oven at 375° F for 35-40 minutes or until toothpick inserted in center comes out clean.
9. Cool 10-15 minutes. Loosen edges with knife and gently remove loaf from the pan.
