BLACK BEAN SOUP - 1-1/2 CUP ONION, CHOPPED, 1 TSP OLIVE OIL, 1 CUP RED BELL PEPPER, CHOPPED, 4 GARLIC CLOVES, MINCED, 1 (15.5 OZ) CAN DICED TOMATOES WITH JUICES, 1 (4 OZ) CAN DICED GREEN CHILES, DRAINED, 1-1/2 TBSP GROUND CUMIN, 1 (14 OZ) CAN CHICKEN BROTH, 4 (15.5 OZ) CANS SHURFINE BLACK BEANS DRAINED AND RINSED, 1/4 CUP RED WINE VINEGAR, SOUR CREAM. HEAT OIL IN LARGE, DEEP SAUCEPAN. SAUTE ONION, BELL PEPPER AND GARLIC UNTIL TENDER. ADD REMAINING INGREDIENTS AND SIMMER FOR 10 MINUTES. SERVE GARNISHED WITH SOUR CREAM. MAKES 6 SERVINGS
