Rye Flour*
Rye flour is made from ground up grains of Rye grass (Secale cereale). Rye flour is used to make sourdough and rye bread. It has a lower gluten content than wheat flour, which leads to a denser bread. It also possesses a higher proportion of soluble fiber, which aids in digestion and can lower cholesterol and blood sugar levels. Rye flour can vary in from light to dark depending on the amount of bran that remains in the flour after processing.
