Coffee is one of the two most common aromatic beverages, the other being tea. An aromatic beverage is defined as one generating a pleasant odor from plants or spices. Coffee consists primarily of water with some additional compounds extracted from coffee beans during brewing. The aroma, taste and stimulating qualities of coffee result from extracted compounds such as volatile compounds, bitter substances (including polyphenols) and methylxanthines (including caffeine and theobromine). Scandinavians consume more coffee overall than any other nation in the world, with Americans second in consumption. Although many varieties of the coffee plant are grown, only two, Coffea Arabica and Coffea robusta, constitute 99 per cent of the commercial crop. Countries with tropical rain forest climates are conducive to coffee production. The flavor and quality of coffee can vary according to the region where the particular coffee plant is grown.
