Parmesan and Cheddar Cheeses
Parmesan is a hard, dry, granular cows milk cheese that is restricted to production in a few Italian provinces. Cheddar is a hard, off-white (unless colored with annatto) cheese that has a sharp-taste. It gets it's name from both its origin and a processing step called "cheddaring" which influences texture and flavor.
