Liquid soybean oil is a vegetable oil extracted from the seeds of the soybean. It is one of the most widely consumed cooking oils. Hydrogenated soybean oil is soybean oil that has had hydrogen gas applied to it. This process "hardens" the oil so it is solid at room temperature and has a higher melting point. When the oil is fully hydrogenated, it typically does not contain trans fats and functions similarly to saturated fats like coconut oil or palm oil.
