 Potassium sorbate is a salt of sorbic acid that is used in foods to protect against yeast and molds. Sodium Benzoate is a salt of benzoic acid (an acid commonly found in foods like cranberries, prunes, and cinnamon) that is used as an antimicrobial in acidic foods. Calcium Disodium EDTA is a calcium salt that can control the reaction of trace minerals in food, preventing the deterioration of color, texture, and oxidation. Natamycin is an anti-fungal product that is produced via the fermentation process of the soil bacteria Streptomyces natalensis. In food, natamycin is typically used to inhibit mold growth on cheeses.
