Cheese Enchiladas, With Red Enchilada Sauce

Red peppers are red chili peppers of the genus Capsicum, members of the nightshade family, Solanaceae. The spongy interior placenta (commonly called ribs) is where the fruit develops its characteristic heat-producing chemical, capsaicin. Some capsaicin coats the seeds and circulates to the fleshy shell, but to a lesser degree. The flavor can range from sweet to hot depending on the variety of peppers and level of usage.
