Caramel Powder
Caramel powder is a dark brown powder that is used to add warm brown color to foodstuffs. It is used in drink powders, spice mixes, and in place of liquid caramel coloring. It is made by heating carbohydrates, either alone or in the presence of acids, alkalies and/or salts. After the product is heated appropriately, it is cooled and ground to form the powder.
