Modified Gum Acacia is Gum Acacia that has been treated to enhance its performance in different applications such as stability, texture, or viscosity. Gum Acacia comes from the secretions of several varieties of Acacia trees. It was one of the first gums used in confectionery sweets and has many uses in food production including thickening (which helps with suspension, stabilization, and whipping), emulsifying, bulking, and film-forming.
