Spicy Boneless Fried Chicken Patties

Acacia gum comes from the secretions of several varieties of Acacia trees. It was one of the first gums used in confectionery sweets and has many uses in food production including thickening (which helps with suspension, stabilization, and whipping), emulsifying, bulking, and film-forming.  Xanthan gum is a very common gum that is used in salad dressings sauces, desserts, baked goods, and beverages. It is widely used for its stability during temperature and acidity changes.
