Cheddar cheese a semi-hard and sharp tasting cheese. It is a cheese that has gone through a process called 'cheddaring'. The process aims to reduce the whey content, increase acidity, and gives distinct flavors and textures. Cheddar is white by nature unless otherwise colored by annatto. Colby is also a semi-hard cheese and is the same cheese as cheddar without the cheddaring process.
