Gum Arabic
Gum Arabic comes from the secretions of a particular variety of Acacia tree. It was one of the first gums used in confectionery sweets, and has many uses in food production including thickening (which helps with suspension, stabilization, and whipping), emulsifying, bulking, and film forming.
