Gluconic acid (E574) is a naturally occurring food acid produced from the decomposition of dextrose. It can be found in wine and honey, and is used in desserts, beverages, processed fruits and vegetables, milk and beer. It acts as a preservative by regulating the acidity of the food as well as by binding with calcium and iron and assisting antioxidant molecules.
