Blue cheese is a dairy product made from either the acidification or coagulation of milk (cheese).  The addition of the fungus Penicillium gives this classification of cheese its distinct blue-spotted color, odor, and salty, sharp flavor. Cheddar cheese is a type of cheese that has gone through a process called 'cheddaring' during its manufacture. The process aims to reduce the whey content, increase acidity, and gives distinct flavors and textures. Cheddar is commonly aged and colored yellow from Annatto seed. Granular cheese is a type of cheese produced by repeatedly stirring and draining a mixture of curd and whey. A semi-soft cheese is a cheese that has a water content that is generally between 36% and 45%. They undergo an average aging process, usually retain fresh milk flavors, and typically have a range of firm, but pliable textures.
