Blueberries are small berry ranging in color from blue to maroon to purple-black as well as in flavor, from sweet to tangy. Blueberries are very rich in nutrients vitamin A, E, anthocyanins and polyphenols, which have antioxidant qualities. To get the juice, the blueberries are pressed removing the juice, and then a portion of the water content is removed through a heating process, resulting in Blueberry juice concentrate. Blueberry puree is thick emulsion of the berries.
