Dried egg yolks are dehydrated egg yolks. Egg yolks are the colored portion of the egg that contains most of the egg's iron, thiamin, vitamin A and fat. The majority of the yolk is water, fat, and protein. It is commonly used as an emulsifier and color source for food products.
