Casein (A Milk Derivative)
Casein is a protein found in milk. It is naturally present in all dairy products, but can also be added to foods such as noodles, chocolate, ice cream, sweets, mayonnaise and processed cheese, as it makes an excellent binder, emulsifier and milk substitute. Casein may also be added to foods to increase protein content. In the case of dairy or milk allergy, casein and casein-derived products such as caseinates should be avoided. As this ingredient has been derived from milk, it may also contain lactose.
