Whole Grain Rye Flour
Whole grain rye flour, also known as dark rye flour or rye meal, is made from the bran, germ, and endosperm of rye kernels (Secale cereale). Whole grain rye flour is darker is darker in color than other rye flours due to the inclusion of the bran and germ. Whole grain rye flour has a low gluten content and possesses high levels of soluble fiber, which aids in digestion. The most well-known whole grain rye flour product is pumpernickel bread, but it is also used to make a variety of other bread types.
